Green Mangoes:

Unripe mangoes, often Buxton Spice or Long mango cultivars in Guyana, are the primary ingredient. They can be grated or cut into chunks.

 

Mustard Oil:

This provides a distinct, pungent flavor traditional to the dish.

 

Garlic and Peppers:

Generous amounts of garlic and hot peppers, such as habanero or scotch bonnet, contribute significant heat and flavor.

 

Amchar Masala:

A specific blend of ground, roasted spices is essential for authentic taste.

 

Other Spices/Seasonings:

Salt, roasted ground cumin (geera), and sometimes a little sugar or vinegar are also used.
